Wine made using Pecorino grapes (100%).

Production tecniques
The collection of the bunches, carried out by hand in plastic crates, is anticipated of a few days to avoid an excessive accumulation of sugars inside the berries, that is typical of this kind of grapes. This technique makes us get a wine perfectly balanced, with a great structure, but at the same time fresh, with a remarkable acidity.
The production is about 70 quintals per hectare.
After the harvest the destemming takes place, use of cold for clarification and dry ice to avoid oxidation.
It ages in steel tank first and then in bottle, for a total rest of at least 6 months.

Colour
Straw yellow colour with yellow-green highlights, cristal clear and consisten.

Aromatic notes
The nose offer complex aromas combining white flowers and ripe yellow fruit such as pear, peach and banana.

Tasting notes
The style of this wine is based on verticality and freshness in mouth. The last one determines a plesant persistence in mouth and provides an uncommon longevity.
The great body gives the wine an important impact from the first sip.
Then, it becomes a smooth and persistent wine as it heads into the long finish.

Food pairing
Perfect with seafood and fish dishes,ideal if cooked in the oven. We suggest: turbot with tomatoes and potatoes
Great with first courses of fish. We suggest: spaghetti with clams or lasagne of fish.
Thank to its freshness and the structure is perfect as combine with sashimi or the more important special sushi rolls.
Aromatic salads, fried “olive ascolane”, ciabuscolo,salami. Soft cheeses with strong flavours such as Gorgonzola and blue cheese.
Also nice with white meats, such as tenderloin, cooked over charcoal and chicken fillet.
