Production tecniques
The collection of the bunches, carried out by hand, is anticipated of a few days. This will lead to a less accumulation of sugars inside the berries and an higher level of acidity. The wine obtained will have a delicate structure and an elevated freshness in the mouth, making this wine extremely approachable and very easy to drink.
The production is about 90 quintals per hectare.
After the harvest the destemming takes place, use of cold for clarification and dry ice to avoid oxidation.
It ages in steel tank first and then in bottle, for a total rest of at least 4 months..

Light straw yellow, brillant, vivacious and with shades of green.

Aromatic notes
An intense bouquets of white flowers, as linden and yellow flowers. Also white fruits as apple and pears.

Tasting notes
On the palate the taste is consistent with distinct persistence and a balanced freshness. A zesty acidity and intriguing touch of mineral make this wine delicious and extremely approachable. A fruity wine but with a very elegant body that is the ideal choice for your daily meals.

Food pairing
Ideal with any kind of happy hour, from the fish courses to more salted ones. We suggest: fried “olive ascolane”, ciabuscolo,salami or clams "in guazzetto".
Thank to its freshness and the delicate structure is perfect as combine with sushi.
Great with first courses of fish. We suggest: pasta with shrimps and zucchini.
Seafood and fish dishes, better if delicate.
